Ingredients

  • 4 cloves garlic
  • 2 egg yolks
  • 120 ml olive oil
  • 60 ml vegetable oil
  • 2.5 ml salt

Instructions

Plan my prep
  1. Step 1.Pound garlic with salt to a paste using a mortar and pestle.
  2. Step 2.Beat in egg yolks until pale.
  3. Step 3.Add oils drop by drop at first, then in a thin stream, whisking constantly.
  4. Step 4.If it splits, start fresh with a yolk and whisk the broken mixture in slowly.
