  • 480 ml basmati rice
  • 680.4 g chicken
  • 180 ml yogurt
  • 30 ml biryani masala
  • 2 large onion
  • pinch saffron
  • 30 ml warm milk
  • 45 ml ghee
  • handful fresh mint
  • handful cilantro
  • 4 cardamom pods
  • 1 cinnamon stick
  • 4 cloves
  • 2 bay leaves

  1. Step 1.Marinate chicken in yogurt, biryani masala, salt overnight.
  2. Step 2.Fry onions until deeply golden. Set aside.
  3. Step 3.Parboil rice 70% done with whole spices.
  4. Step 4.Layer in a heavy pot: chicken, fried onions, herbs, rice.
  5. Step 5.Drizzle saffron milk and ghee on top. Seal with foil.
  6. Step 6.Cook on low heat (dum) 30 min. Let rest 10 min before opening.
