- 480 ml basmati rice
- 680.4 g chicken
- 180 ml yogurt
- 30 ml biryani masala
- 2 large onion
- pinch saffron
- 30 ml warm milk
- 45 ml ghee
- handful fresh mint
- handful cilantro
- 4 cardamom pods
- 1 cinnamon stick
- 4 cloves
- 2 bay leaves

Instructions
- Step 1.Marinate chicken in yogurt, biryani masala, salt overnight.
- Step 2.Fry onions until deeply golden. Set aside.
- Step 3.Parboil rice 70% done with whole spices.
- Step 4.Layer in a heavy pot: chicken, fried onions, herbs, rice.
- Step 5.Drizzle saffron milk and ghee on top. Seal with foil.
- Step 6.Cook on low heat (dum) 30 min. Let rest 10 min before opening.
