Ingredients
4 servings
- 4 large flour tortillas, burrito size
- 8 large eggs
- 340 g breakfast sausage, or bacon
- 300 g russet potato, diced small
- 150 g cheddar cheese, shredded
- 30 g butter
- 30 ml vegetable oil
- 4 g salt
- 1 g black pepper
- 120 ml salsa, for serving

Instructions
- Step 1.Heat the oil in a skillet over medium-high and fry the diced potatoes 10 to 12 minutes until crispy and golden; season with half the salt and pepper, then set aside.
- Step 2.In the same pan, cook the crumbled sausage 6 to 8 minutes until browned, then drain off excess fat and set aside.
- Step 3.Whisk the eggs with the remaining salt and pepper.
- Step 4.Melt the butter in a nonstick pan over medium-low heat, add the eggs, and stir gently until softly scrambled, 3 to 4 minutes.
- Step 5.Warm each tortilla in a dry skillet or microwave for a few seconds to make it pliable.
- Step 6.Layer scrambled eggs, potatoes, sausage, and cheese down the center of each tortilla.
- Step 7.Fold in the sides, then roll up tightly into a burrito.
- Step 8.Set the burritos seam-side down in a hot dry skillet and griddle 1 to 2 minutes per side until golden and sealed.
- Step 9.Cut in half and serve with salsa.
