Ingredients

4 servings
  • 4 large flour tortillas, burrito size
  • 8 large eggs
  • 340 g breakfast sausage, or bacon
  • 300 g russet potato, diced small
  • 150 g cheddar cheese, shredded
  • 30 g butter
  • 30 ml vegetable oil
  • 4 g salt
  • 1 g black pepper
  • 120 ml salsa, for serving

  1. Step 1.Heat the oil in a skillet over medium-high and fry the diced potatoes 10 to 12 minutes until crispy and golden; season with half the salt and pepper, then set aside.
  2. Step 2.In the same pan, cook the crumbled sausage 6 to 8 minutes until browned, then drain off excess fat and set aside.
  3. Step 3.Whisk the eggs with the remaining salt and pepper.
  4. Step 4.Melt the butter in a nonstick pan over medium-low heat, add the eggs, and stir gently until softly scrambled, 3 to 4 minutes.
  5. Step 5.Warm each tortilla in a dry skillet or microwave for a few seconds to make it pliable.
  6. Step 6.Layer scrambled eggs, potatoes, sausage, and cheese down the center of each tortilla.
  7. Step 7.Fold in the sides, then roll up tightly into a burrito.
  8. Step 8.Set the burritos seam-side down in a hot dry skillet and griddle 1 to 2 minutes per side until golden and sealed.
  9. Step 9.Cut in half and serve with salsa.
