  • 4 ripe tomatoes, large, ripe
  • 250 g fresh mozzarella (or buffalo mozzarella)
  • 15 g fresh basil leaves
  • 45 ml extra virgin olive oil
  • 3 g flaky sea salt, to taste
  • 1 g black pepper, optional

Plan my prep
  1. Step 1.Bring the tomatoes and mozzarella to room temperature for the best flavor and texture.
  2. Step 2.Slice the tomatoes into rounds about 1 cm thick.
  3. Step 3.Slice the mozzarella into rounds of similar thickness.
  4. Step 4.Arrange the tomato and mozzarella slices alternating and slightly overlapping on a serving plate.
  5. Step 5.Tuck whole fresh basil leaves between the slices.
  6. Step 6.Drizzle the extra virgin olive oil evenly over the top.
  7. Step 7.Sprinkle with flaky sea salt and a little black pepper if using.
  8. Step 8.Serve immediately at room temperature; do not refrigerate after assembling. Traditionally no balsamic vinegar is added.
