  • 1 large head cauliflower
  • 45 ml butter
  • 45 ml flour
  • 360 ml milk
  • 1 cup grated gruyere
  • 5 ml dijon mustard
  • pinch nutmeg
  • 80 ml breadcrumbs

  1. Step 1.Roast cauliflower florets at 425F 20 min until golden.
  2. Step 2.Make bechamel: melt butter, whisk in flour, add milk gradually. Cook until thick.
  3. Step 3.Stir in half the gruyere, mustard, nutmeg.
  4. Step 4.Toss cauliflower in sauce. Pour into baking dish. Top with remaining cheese and breadcrumbs.
  5. Step 5.Bake 20 min until golden and bubbling.
