  • 6 (about 680 g) very ripe bananas, mashed
  • 250 g all-purpose flour
  • 1 box (96 g) instant vanilla pudding mix
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 300 g granulated sugar
  • 180 ml vegetable oil
  • 4 large eggs
  • 170 g semisweet chocolate chips
  • 75 g shredded sweetened coconut

  1. Step 1.Heat the oven to 325 F (165 C). Grease two 8-by-4-inch (20-by-10 cm) loaf pans.
  2. Step 2.In a large bowl, whisk together the flour, vanilla pudding mix, baking soda and salt.
  3. Step 3.In a separate bowl, combine the mashed bananas, sugar, oil and eggs and mix until smooth.
  4. Step 4.Pour the wet ingredients into the dry and stir just until combined; do not overmix.
  5. Step 5.Fold in the chocolate chips and shredded coconut.
  6. Step 6.Divide the batter evenly between the two prepared loaf pans.
  7. Step 7.Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean and the tops are golden.
  8. Step 8.Cool in the pans for 10 minutes, then turn out onto a rack to cool before slicing.
