Ingredients

- 680 g ground beef, 80/20 chuck
- 4 slices American cheese
- 4 hamburger buns, split
- 6 g salt
- 2 g black pepper, freshly ground
- 15 g butter, for the buns
- 4 leaves lettuce
- 1 tomato, sliced
- 1/2 onion, thinly sliced
- 8 slices dill pickles
Make it your way
Instructions
- Step 1.Divide the beef into 4 equal portions and gently form into patties slightly wider than the buns; do not overwork.
- Step 2.Press a shallow dimple into the center of each patty so it stays flat while cooking.
- Step 3.Season both sides generously with salt and pepper just before cooking.
- Step 4.Heat a cast-iron skillet or griddle over high heat until very hot.
- Step 5.Cook the patties 3 minutes without moving them to build a seared crust.
- Step 6.Flip and place a slice of cheese on each; cook another 2 minutes for medium, until the cheese melts.
- Step 7.Meanwhile, butter the cut sides of the buns and toast them on the griddle until golden.
- Step 8.Build each burger: bottom bun, lettuce, tomato, patty with cheese, onion, and pickles.
- Step 9.Cap with the top bun and serve immediately.
