Ingredients

4 servings
  • 680 g ground beef, 80/20 chuck
  • 4 slices American cheese
  • 4 hamburger buns, split
  • 6 g salt
  • 2 g black pepper, freshly ground
  • 15 g butter, for the buns
  • 4 leaves lettuce
  • 1 tomato, sliced
  • 1/2 onion, thinly sliced
  • 8 slices dill pickles

Plan my prep
  1. Step 1.Divide the beef into 4 equal portions and gently form into patties slightly wider than the buns; do not overwork.
  2. Step 2.Press a shallow dimple into the center of each patty so it stays flat while cooking.
  3. Step 3.Season both sides generously with salt and pepper just before cooking.
  4. Step 4.Heat a cast-iron skillet or griddle over high heat until very hot.
  5. Step 5.Cook the patties 3 minutes without moving them to build a seared crust.
  6. Step 6.Flip and place a slice of cheese on each; cook another 2 minutes for medium, until the cheese melts.
  7. Step 7.Meanwhile, butter the cut sides of the buns and toast them on the griddle until golden.
  8. Step 8.Build each burger: bottom bun, lettuce, tomato, patty with cheese, onion, and pickles.
  9. Step 9.Cap with the top bun and serve immediately.
