- 113 g unsalted butter, softened
- 150 g granulated sugar
- 55 g light brown sugar, packed
- 5 g baking soda
- 6 g salt
- 1.5 g ground cinnamon, optional
- 2 large eggs, room temperature
- 340 g ripe bananas, mashed
- 240 g all-purpose flour
- 5 ml vanilla extract
- 115 g chopped walnuts, optional
Make it your way
Instructions
- Step 1.Heat the oven to 350 F (175 C) and grease a 9 x 5 inch (23 x 13 cm) loaf pan.
- Step 2.Beat the softened butter with both sugars, the baking soda, salt, and cinnamon until smooth and creamy.
- Step 3.Beat in the eggs one at a time until fully incorporated.
- Step 4.Mix in the mashed bananas and vanilla until combined.
- Step 5.Add the flour and stir just until no dry streaks remain; do not overmix.
- Step 6.Fold in the walnuts if using.
- Step 7.Scrape the batter into the prepared pan and smooth the top.
- Step 8.Bake 60 to 65 minutes, until a toothpick inserted in the center comes out clean; tent with foil after 45 minutes if browning too fast.
- Step 9.Cool in the pan 10 minutes, then turn out onto a rack to cool completely before slicing.
