  • 113 g unsalted butter, softened
  • 150 g granulated sugar
  • 55 g light brown sugar, packed
  • 5 g baking soda
  • 6 g salt
  • 1.5 g ground cinnamon, optional
  • 2 large eggs, room temperature
  • 340 g ripe bananas, mashed
  • 240 g all-purpose flour
  • 5 ml vanilla extract
  • 115 g chopped walnuts, optional

  1. Step 1.Heat the oven to 350 F (175 C) and grease a 9 x 5 inch (23 x 13 cm) loaf pan.
  2. Step 2.Beat the softened butter with both sugars, the baking soda, salt, and cinnamon until smooth and creamy.
  3. Step 3.Beat in the eggs one at a time until fully incorporated.
  4. Step 4.Mix in the mashed bananas and vanilla until combined.
  5. Step 5.Add the flour and stir just until no dry streaks remain; do not overmix.
  6. Step 6.Fold in the walnuts if using.
  7. Step 7.Scrape the batter into the prepared pan and smooth the top.
  8. Step 8.Bake 60 to 65 minutes, until a toothpick inserted in the center comes out clean; tent with foil after 45 minutes if browning too fast.
  9. Step 9.Cool in the pan 10 minutes, then turn out onto a rack to cool completely before slicing.
