  • 60 ml butter
  • 60 ml all-purpose flour
  • 480 ml milk
  • 2.5 ml salt
  • 1.25 ml white pepper
  • pinch nutmeg

  1. Step 1.Melt butter in a saucepan over medium heat.
  2. Step 2.Whisk in flour and cook 2 minutes until pale gold (the roux).
  3. Step 3.Add milk gradually while whisking constantly to prevent lumps.
  4. Step 4.Cook, stirring, until sauce thickens and coats a spoon, about 8 minutes.
  5. Step 5.Season with salt, white pepper, and nutmeg.
