Classic French Toast

- 8 slices thick-sliced bread, brioche or challah, slightly stale
- 4 large eggs
- 240 ml whole milk
- 25 g granulated sugar
- 5 ml vanilla extract
- 2 g ground cinnamon
- 1 g salt
- 30 g unsalted butter, for the pan
Make it your way
Instructions
- Step 1.In a shallow dish, whisk the eggs, milk, sugar, vanilla, cinnamon, and salt until fully combined.
- Step 2.Heat a large skillet or griddle over medium heat and melt some of the butter.
- Step 3.Dip a slice of bread into the custard, soaking 20 to 30 seconds per side; do not oversoak or it falls apart.
- Step 4.Let excess custard drip off, then lay the slice on the hot buttered surface.
- Step 5.Cook 2 to 3 minutes until the underside is golden brown.
- Step 6.Flip and cook another 2 to 3 minutes until the second side is golden and the center is set.
- Step 7.Add more butter to the pan between batches as needed.
- Step 8.Keep finished slices warm in a 90 C (200 F) oven while you cook the rest.
- Step 9.Serve hot, dusted with powdered sugar and drizzled with maple syrup.
