Classic French Toast

  • 8 slices thick-sliced bread, brioche or challah, slightly stale
  • 4 large eggs
  • 240 ml whole milk
  • 25 g granulated sugar
  • 5 ml vanilla extract
  • 2 g ground cinnamon
  • 1 g salt
  • 30 g unsalted butter, for the pan

  1. Step 1.In a shallow dish, whisk the eggs, milk, sugar, vanilla, cinnamon, and salt until fully combined.
  2. Step 2.Heat a large skillet or griddle over medium heat and melt some of the butter.
  3. Step 3.Dip a slice of bread into the custard, soaking 20 to 30 seconds per side; do not oversoak or it falls apart.
  4. Step 4.Let excess custard drip off, then lay the slice on the hot buttered surface.
  5. Step 5.Cook 2 to 3 minutes until the underside is golden brown.
  6. Step 6.Flip and cook another 2 to 3 minutes until the second side is golden and the center is set.
  7. Step 7.Add more butter to the pan between batches as needed.
  8. Step 8.Keep finished slices warm in a 90 C (200 F) oven while you cook the rest.
  9. Step 9.Serve hot, dusted with powdered sugar and drizzled with maple syrup.
