- 900 g ground beef, 80/20
- 1 onion, finely diced
- 2 cloves garlic, minced
- 75 g breadcrumbs
- 120 ml whole milk
- 2 large eggs, beaten
- 15 ml Worcestershire sauce
- 60 ml ketchup, for the mix
- 9 g salt
- 2 g black pepper
- 120 ml ketchup, for the glaze
- 30 g brown sugar, for the glaze
- 15 ml apple cider vinegar, for the glaze
Make it your way
Instructions
- Step 1.Heat oven to 175 C (350 F) and line a baking sheet with foil.
- Step 2.In a small bowl, soak the breadcrumbs in the milk for 5 minutes until absorbed.
- Step 3.In a large bowl, combine the ground beef, onion, garlic, soaked breadcrumbs, eggs, Worcestershire, 60 ml ketchup, salt, and pepper.
- Step 4.Mix gently with your hands just until combined; overmixing makes the loaf dense.
- Step 5.Transfer to the baking sheet and shape into a loaf about 23 by 13 cm (9 by 5 inches).
- Step 6.Whisk the glaze ingredients (120 ml ketchup, brown sugar, vinegar) together and brush half over the loaf.
- Step 7.Bake 40 minutes, then brush on the remaining glaze.
- Step 8.Continue baking 15 to 20 minutes until the internal temperature reaches 71 C (160 F).
- Step 9.Rest the meatloaf 10 minutes before slicing so the juices redistribute.
- Step 10.Slice thick and serve.
