- 1.36 kg chicken pieces (legs and thighs)
- 113.4 g bacon lardons
- 240 ml pearl onions
- 226.8 g cremini mushrooms
- 1 bottle red Burgundy wine
- 240 ml chicken broth
- 4 cloves garlic
- 3 sprigs thyme
- 2 bay leaf
- 15 ml tomato paste
- 30 ml butter

Instructions
- Step 1.Brown chicken in batches in a Dutch oven. Set aside.
- Step 2.Cook bacon until crisp. Add pearl onions, cook until golden.
- Step 3.Add mushrooms, cook 5 min. Add garlic and tomato paste.
- Step 4.Return chicken. Add wine and broth. Braise covered 45 min.
- Step 5.Remove chicken. Reduce sauce 15 min. Swirl in butter. Return chicken.
