Ingredients

- 480 ml heavy cream
- 6 egg yolks
- 120 ml sugar
- 1 vanilla bean
- 30 ml sugar for topping
Make it your way
Instructions
- Step 1.Steep cream with split vanilla bean over low heat. Cool slightly.
- Step 2.Whisk yolks with sugar until pale. Slowly pour in warm cream.
- Step 3.Strain into ramekins. Bake in a bain marie at 325F 35-40 min.
- Step 4.Refrigerate 4+ hours.
- Step 5.Before serving, sprinkle sugar and torch until cracked and golden.
