Ingredients

  • 480 ml heavy cream
  • 6 egg yolks
  • 120 ml sugar
  • 1 vanilla bean
  • 30 ml sugar for topping

Plan my prep
  1. Step 1.Steep cream with split vanilla bean over low heat. Cool slightly.
  2. Step 2.Whisk yolks with sugar until pale. Slowly pour in warm cream.
  3. Step 3.Strain into ramekins. Bake in a bain marie at 325F 35-40 min.
  4. Step 4.Refrigerate 4+ hours.
  5. Step 5.Before serving, sprinkle sugar and torch until cracked and golden.
