Ingredients

- 2 tbsp instant coffee, must be instant, not ground
- 2 tbsp granulated sugar
- 2 tbsp hot water, just-boiled
- 480 ml milk, cold or hot, dairy or plant
- for serving ice, if iced
Make it your way
Instructions
- Step 1.Add the instant coffee, sugar and hot water in exactly equal amounts to a mixing bowl.
- Step 2.Using a hand mixer or electric whisk, beat on medium-high speed.
- Step 3.Whip for about 2 to 5 minutes, until the mixture transforms from dark liquid to a thick, pale-caramel foam that holds soft peaks.
- Step 4.Fill two glasses with ice (or use warm milk for a hot version) and pour in the milk, leaving room at the top.
- Step 5.Spoon the whipped coffee foam generously over the milk so it sits in a fluffy layer on top.
- Step 6.Serve right away, and stir to combine the foam into the milk before drinking.
