Ingredients

  • 3 lbs thinly sliced yellow onions
  • 45 ml butter
  • 15 ml olive oil
  • 3 cloves garlic
  • 120 ml dry white wine
  • 960 ml beef or vegetable broth
  • 3 sprigs thyme
  • 1 bay leaf
  • 8 baguette slices
  • 2 cups grated Gruyere cheese

  1. Step 1.Cook onions in butter and oil over medium-low heat, stirring often, until deeply golden, 60 min.
  2. Step 2.Add garlic, cook 2 min. Add wine, scrape up the browned bits.
  3. Step 3.Add broth, thyme, bay leaf. Simmer 15 min. Season.
  4. Step 4.Ladle into oven-safe bowls. Top with baguette and cheese. Broil until bubbly.
