- 3 lbs thinly sliced yellow onions
- 45 ml butter
- 15 ml olive oil
- 3 cloves garlic
- 120 ml dry white wine
- 960 ml beef or vegetable broth
- 3 sprigs thyme
- 1 bay leaf
- 8 baguette slices
- 2 cups grated Gruyere cheese

Instructions
- Step 1.Cook onions in butter and oil over medium-low heat, stirring often, until deeply golden, 60 min.
- Step 2.Add garlic, cook 2 min. Add wine, scrape up the browned bits.
- Step 3.Add broth, thyme, bay leaf. Simmer 15 min. Season.
- Step 4.Ladle into oven-safe bowls. Top with baguette and cheese. Broil until bubbly.
