Ingredients
2 servings
- 4 pork sausages
- 4 rashers back bacon
- 2 large eggs
- 400 g baked beans
- 2 tomatoes, halved
- 150 g button mushrooms
- 2 slices black pudding, optional
- 2 slices bread, for toast
- 15 ml vegetable oil
- 15 g butter
- to taste salt and pepper
Make it your way
Instructions
- Step 1.Heat the oil in a large frying pan over medium heat and add the sausages, cooking 12 to 15 minutes, turning, until browned all over.
- Step 2.Push the sausages to one side and add the bacon, frying 2 to 3 minutes per side.
- Step 3.Add the mushrooms and the halved tomatoes cut-side down, cooking 4 to 5 minutes until softened and browned.
- Step 4.Add the black pudding slices, if using, and fry 2 minutes per side.
- Step 5.Meanwhile, warm the baked beans in a small saucepan over low heat.
- Step 6.In a separate pan, melt the butter and fry the eggs to your liking, 2 to 3 minutes for runny yolks.
- Step 7.Toast the bread and butter it.
- Step 8.Season the tomatoes and mushrooms with salt and pepper.
- Step 9.Arrange everything on warmed plates with a spoonful of beans and serve immediately while hot.
