Ingredients

2 servings
  • 4 pork sausages
  • 4 rashers back bacon
  • 2 large eggs
  • 400 g baked beans
  • 2 tomatoes, halved
  • 150 g button mushrooms
  • 2 slices black pudding, optional
  • 2 slices bread, for toast
  • 15 ml vegetable oil
  • 15 g butter
  • to taste salt and pepper

Plan my prep
  1. Step 1.Heat the oil in a large frying pan over medium heat and add the sausages, cooking 12 to 15 minutes, turning, until browned all over.
  2. Step 2.Push the sausages to one side and add the bacon, frying 2 to 3 minutes per side.
  3. Step 3.Add the mushrooms and the halved tomatoes cut-side down, cooking 4 to 5 minutes until softened and browned.
  4. Step 4.Add the black pudding slices, if using, and fry 2 minutes per side.
  5. Step 5.Meanwhile, warm the baked beans in a small saucepan over low heat.
  6. Step 6.In a separate pan, melt the butter and fry the eggs to your liking, 2 to 3 minutes for runny yolks.
  7. Step 7.Toast the bread and butter it.
  8. Step 8.Season the tomatoes and mushrooms with salt and pepper.
  9. Step 9.Arrange everything on warmed plates with a spoonful of beans and serve immediately while hot.
