Ingredients

  • 450 g pasta (penne or shells)
  • 60 ml olive oil
  • 1 shallot, finely minced
  • 2 cloves garlic, minced
  • 60 g tomato paste
  • 30 ml vodka
  • 120 ml heavy cream
  • 1/2 tsp red pepper flakes, or to taste
  • 1 tbsp unsalted butter
  • 50 g grated Parmesan, plus more to serve
  • 1 handful fresh basil, to finish
  • to taste kosher salt

Plan my prep
  1. Step 1.Bring a large pot of salted water to a boil for the pasta and start cooking it to al dente; reserve about 1/2 cup (120 ml) pasta water before draining.
  2. Step 2.Meanwhile, heat the olive oil in a large skillet over medium heat and soften the minced shallot and garlic for 3 to 4 minutes without browning.
  3. Step 3.Stir in the tomato paste and cook, stirring, for 4 to 5 minutes until it darkens to a deep brick red.
  4. Step 4.Pour in the vodka and let it cook off for about 1 minute, scraping the pan.
  5. Step 5.Add the heavy cream and red pepper flakes, stirring into a smooth sauce, and simmer gently for 2 minutes.
  6. Step 6.Add the drained pasta to the sauce along with a splash of reserved pasta water and toss to coat.
  7. Step 7.Off or over low heat, stir in the butter and grated Parmesan until the sauce turns glossy and clings to the pasta.
  8. Step 8.Season with salt, plate, and finish with torn basil and extra Parmesan.
