Gigi Hadid's Spicy Vodka Pasta

Ingredients
4 servings
- 450 g pasta (penne or shells)
- 60 ml olive oil
- 1 shallot, finely minced
- 2 cloves garlic, minced
- 60 g tomato paste
- 30 ml vodka
- 120 ml heavy cream
- 1/2 tsp red pepper flakes, or to taste
- 1 tbsp unsalted butter
- 50 g grated Parmesan, plus more to serve
- 1 handful fresh basil, to finish
- to taste kosher salt

Instructions
- Step 1.Bring a large pot of salted water to a boil for the pasta and start cooking it to al dente; reserve about 1/2 cup (120 ml) pasta water before draining.
- Step 2.Meanwhile, heat the olive oil in a large skillet over medium heat and soften the minced shallot and garlic for 3 to 4 minutes without browning.
- Step 3.Stir in the tomato paste and cook, stirring, for 4 to 5 minutes until it darkens to a deep brick red.
- Step 4.Pour in the vodka and let it cook off for about 1 minute, scraping the pan.
- Step 5.Add the heavy cream and red pepper flakes, stirring into a smooth sauce, and simmer gently for 2 minutes.
- Step 6.Add the drained pasta to the sauce along with a splash of reserved pasta water and toss to coat.
- Step 7.Off or over low heat, stir in the butter and grated Parmesan until the sauce turns glossy and clings to the pasta.
- Step 8.Season with salt, plate, and finish with torn basil and extra Parmesan.
