Ingredients

  • 4 (about 500 g) ripe tomatoes, cut into wedges
  • 1 (about 300 g) cucumber, sliced into half moons
  • 1 (about 150 g) green bell pepper, sliced into rings
  • 1/2 (about 75 g) red onion, thinly sliced
  • 75 g Kalamata olives
  • 150 g feta cheese, in one slab
  • 45 ml extra-virgin olive oil
  • 15 ml red wine vinegar, optional
  • 2 g dried oregano
  • 2 g kosher salt

Instructions

Plan my prep
  1. Step 1.Cut the tomatoes into thick wedges and place them in a wide shallow bowl.
  2. Step 2.Add the cucumber half moons, green pepper rings and thinly sliced red onion.
  3. Step 3.Scatter the Kalamata olives over the vegetables.
  4. Step 4.Drizzle with the olive oil and the red wine vinegar if using, then sprinkle with salt and toss very gently.
  5. Step 5.Lay the whole slab of feta on top of the salad rather than crumbling it, the traditional way.
  6. Step 6.Sprinkle the dried oregano generously over the feta and the salad, then serve at room temperature with crusty bread.
