The authentic Greek country salad of ripe tomatoes, cucumber, onion, peppers and olives topped with a slab of feta and dressed simply with olive oil and oregano. No lettuce, all flavor.

Ingredients

- 4 (about 500 g) ripe tomatoes, cut into wedges
- 1 (about 300 g) cucumber, sliced into half moons
- 1 (about 150 g) green bell pepper, sliced into rings
- 1/2 (about 75 g) red onion, thinly sliced
- 75 g Kalamata olives
- 150 g feta cheese, in one slab
- 45 ml extra-virgin olive oil
- 15 ml red wine vinegar, optional
- 2 g dried oregano
- 2 g kosher salt
Make it your way
Instructions
- Step 1.Cut the tomatoes into thick wedges and place them in a wide shallow bowl.
- Step 2.Add the cucumber half moons, green pepper rings and thinly sliced red onion.
- Step 3.Scatter the Kalamata olives over the vegetables.
- Step 4.Drizzle with the olive oil and the red wine vinegar if using, then sprinkle with salt and toss very gently.
- Step 5.Lay the whole slab of feta on top of the salad rather than crumbling it, the traditional way.
- Step 6.Sprinkle the dried oregano generously over the feta and the salad, then serve at room temperature with crusty bread.
