- 4 x 170 g boneless skinless chicken breasts, pounded to even thickness
- 45 ml olive oil
- 60 ml lemon juice, freshly squeezed
- 3 garlic cloves, minced
- 2 g dried oregano
- 1 tbsp fresh thyme, chopped
- 5 g kosher salt
- 1 g black pepper

Instructions
- Step 1.Whisk the olive oil, lemon juice, garlic, oregano, thyme, salt and pepper together in a bowl to make the marinade.
- Step 2.Add the chicken breasts and turn to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Step 3.Heat a grill or grill pan to medium-high, about 200 C (400 F), and lightly oil the grates.
- Step 4.Remove the chicken from the marinade, letting the excess drip off, and place on the grill.
- Step 5.Grill the first side for 5 to 6 minutes until char marks form and the chicken releases easily.
- Step 6.Flip and grill the second side for 4 to 6 minutes until the internal temperature reaches 74 C (165 F).
- Step 7.Transfer to a plate, tent loosely with foil and rest for 5 minutes before slicing so the juices stay in. Serve with extra lemon.
