Ingredients

  • 4 x 170 g boneless skinless chicken breasts, pounded to even thickness
  • 45 ml olive oil
  • 60 ml lemon juice, freshly squeezed
  • 3 garlic cloves, minced
  • 2 g dried oregano
  • 1 tbsp fresh thyme, chopped
  • 5 g kosher salt
  • 1 g black pepper

Plan my prep
  1. Step 1.Whisk the olive oil, lemon juice, garlic, oregano, thyme, salt and pepper together in a bowl to make the marinade.
  2. Step 2.Add the chicken breasts and turn to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Step 3.Heat a grill or grill pan to medium-high, about 200 C (400 F), and lightly oil the grates.
  4. Step 4.Remove the chicken from the marinade, letting the excess drip off, and place on the grill.
  5. Step 5.Grill the first side for 5 to 6 minutes until char marks form and the chicken releases easily.
  6. Step 6.Flip and grill the second side for 4 to 6 minutes until the internal temperature reaches 74 C (165 F).
  7. Step 7.Transfer to a plate, tent loosely with foil and rest for 5 minutes before slicing so the juices stay in. Serve with extra lemon.
