Ingredients

- 3 ripe avocados, Hass
- 40 g white onion, finely diced
- 1 serrano chile, finely minced, seeds optional
- 15 g fresh cilantro, chopped
- 30 ml lime juice, about 1 lime
- 4 g salt, to taste
- 1/2 ripe tomato, seeded and diced, optional

Instructions
- Step 1.Optionally make a paste first: in a molcajete or bowl, grind a little of the onion, chile, cilantro and salt together to release their oils.
- Step 2.Halve the avocados, remove the pits, and scoop the flesh into the bowl.
- Step 3.Add the lime juice immediately to prevent browning and to season.
- Step 4.Mash the avocado with a fork or pestle to your preferred texture, keeping it chunky rather than fully smooth.
- Step 5.Fold in the diced onion, minced serrano and chopped cilantro.
- Step 6.Gently stir in the diced tomato if using, taking care not to overmix.
- Step 7.Taste and adjust with more salt and lime until bright and balanced.
- Step 8.Serve immediately with tortilla chips, pressing plastic wrap directly onto the surface if holding to limit browning.
