Instructions

Plan my prep
  1. Step 1.Optionally make a paste first: in a molcajete or bowl, grind a little of the onion, chile, cilantro and salt together to release their oils.
  2. Step 2.Halve the avocados, remove the pits, and scoop the flesh into the bowl.
  3. Step 3.Add the lime juice immediately to prevent browning and to season.
  4. Step 4.Mash the avocado with a fork or pestle to your preferred texture, keeping it chunky rather than fully smooth.
  5. Step 5.Fold in the diced onion, minced serrano and chopped cilantro.
  6. Step 6.Gently stir in the diced tomato if using, taking care not to overmix.
  7. Step 7.Taste and adjust with more salt and lime until bright and balanced.
  8. Step 8.Serve immediately with tortilla chips, pressing plastic wrap directly onto the surface if holding to limit browning.
