- 1.36 kg chicken pieces
- 3 scotch bonnet peppers
- 30 ml allspice berries
- 6 cloves garlic
- 6 green onions
- 2 inch ginger
- 30 ml soy sauce
- 15 ml brown sugar
- 2 tbsp fresh thyme
- 2.5 ml cinnamon
- 1.25 ml nutmeg
- 30 ml lime juice

Instructions
- Step 1.Blend all marinade ingredients.
- Step 2.Score chicken deeply. Cover in marinade overnight.
- Step 3.Grill over medium heat, turning, 40-45 min until cooked through.
- Step 4.Rest 5 min. Serve with rice and peas.
