Ingredients

- 450 g ground beef (80/20)
- 2 cheddar cheese slices
- 4 bacon
- 8 iceberg or butter lettuce, for wrapping
- 4 g salt
- 2 g black pepper
- 1/2 tomato, sliced, optional
- 30 g red onion, thinly sliced
- 30 g sugar-free mayonnaise
- 10 g yellow mustard

Instructions
- Step 1.Cook the bacon in a skillet over medium heat until crisp, about 6 minutes, then drain on paper towels.
- Step 2.Divide the ground beef into 2 portions and form loose patties slightly wider than the bun-line of lettuce; press a shallow dimple into the center of each.
- Step 3.Season both sides generously with the salt and pepper.
- Step 4.Heat the bacon skillet over medium-high. Sear the patties for 3 to 4 minutes without moving them to build a crust.
- Step 5.Flip and cook another 2 to 3 minutes for medium, laying a cheddar slice on each patty in the last minute to melt.
- Step 6.Rest the patties 2 minutes while you stack 2 lettuce leaves per burger as the base.
- Step 7.Spread mayo and mustard on the lettuce, then add the patty, bacon, tomato and onion.
- Step 8.Top with more lettuce leaves, wrap tightly in parchment, and serve.
