- 900 g chicken wings, split into flats and drums
- 8 g aluminum-free baking powder, not baking soda
- 4 g salt
- 55 g butter, melted
- 4 garlic, minced
- 50 g grated Parmesan cheese
- 8 g fresh parsley, chopped
- 1 g black pepper

Instructions
- Step 1.Preheat the oven to 230 C (450 F). Line a baking sheet with foil and set a wire rack on top; grease the rack.
- Step 2.Pat the wings thoroughly dry with paper towels, the drier the skin the crispier the result.
- Step 3.Toss the wings in a bowl with the baking powder and salt until evenly coated.
- Step 4.Arrange the wings in a single layer on the rack, not touching.
- Step 5.Bake for 20 minutes, then flip each wing and bake another 20 to 25 minutes until deep golden and crisp.
- Step 6.Meanwhile, warm the melted butter with the minced garlic for 1 minute, then stir in half the Parmesan, the parsley and pepper.
- Step 7.Transfer the hot wings to a large bowl and pour over the garlic butter; toss to coat.
- Step 8.Sprinkle with the remaining Parmesan and extra parsley, then serve hot.
