Ingredients

  • 900 g chicken wings, split into flats and drums
  • 8 g aluminum-free baking powder, not baking soda
  • 4 g salt
  • 55 g butter, melted
  • 4 garlic, minced
  • 50 g grated Parmesan cheese
  • 8 g fresh parsley, chopped
  • 1 g black pepper

Instructions

Plan my prep
  1. Step 1.Preheat the oven to 230 C (450 F). Line a baking sheet with foil and set a wire rack on top; grease the rack.
  2. Step 2.Pat the wings thoroughly dry with paper towels, the drier the skin the crispier the result.
  3. Step 3.Toss the wings in a bowl with the baking powder and salt until evenly coated.
  4. Step 4.Arrange the wings in a single layer on the rack, not touching.
  5. Step 5.Bake for 20 minutes, then flip each wing and bake another 20 to 25 minutes until deep golden and crisp.
  6. Step 6.Meanwhile, warm the melted butter with the minced garlic for 1 minute, then stir in half the Parmesan, the parsley and pepper.
  7. Step 7.Transfer the hot wings to a large bowl and pour over the garlic butter; toss to coat.
  8. Step 8.Sprinkle with the remaining Parmesan and extra parsley, then serve hot.
