- 2 lbs cubed lamb shoulder
- 2 onion
- 4 cloves garlic
- 1 preserved lemon
- 120 ml green olives
- 120 ml dried apricots
- 396.9 g canned tomatoes
- 240 ml chicken broth
- 7.5 ml cumin
- 5 ml coriander
- 2.5 ml cinnamon
- 5 ml ginger
- 2.5 ml turmeric
- pinch saffron
- 15 ml honey
- to garnish cilantro

Instructions
- Step 1.Brown lamb in batches. Set aside.
- Step 2.Saute onions until golden. Add garlic and all spices.
- Step 3.Return lamb. Add tomatoes, broth, saffron, honey.
- Step 4.Simmer covered 60 min. Add preserved lemon, olives, apricots.
- Step 5.Cook uncovered 30 min until sauce is thick.
