Ingredients

- 910 g lean ground turkey (93%)
- 15 ml olive oil
- 1 (about 150 g) yellow onion, diced
- 1 (about 150 g) red bell pepper, diced
- 4 cloves garlic, minced
- 32 g tomato paste
- 800 g diced tomatoes, with juice
- 425 g kidney beans, drained and rinsed
- 425 g black beans, drained and rinsed
- 240 ml low-sodium chicken broth
- 16 g chilli powder
- 6 g ground cumin
- 3 g smoked paprika
- 2 g dried oregano
- 6 g kosher salt
- 2 g black pepper
Make it your way
Instructions
- Step 1.Warm the olive oil in a large pot or Dutch oven over medium-high heat.
- Step 2.Add the ground turkey and cook 6 to 8 minutes, breaking it up, until browned and no longer pink.
- Step 3.Stir in the onion, bell pepper, and garlic and cook 4 to 5 minutes until softened.
- Step 4.Add the tomato paste, chilli powder, cumin, smoked paprika, oregano, salt, and pepper; stir 1 minute to bloom the spices.
- Step 5.Pour in the diced tomatoes with their juice, both beans, and the broth, and stir to combine.
- Step 6.Bring to a simmer, then reduce the heat to low and cook uncovered for 25 to 30 minutes, stirring occasionally, until thickened.
- Step 7.Taste and adjust salt. Let it rest 5 minutes before serving.
- Step 8.Divide into 6 bowls; top with options like Greek yogurt, cheese, or cilantro. Keeps 4 days refrigerated or 3 months frozen.
