  • 240 ml glutinous rice flour
  • 60 ml sugar
  • 240 ml water
  • 60 ml cornstarch for dusting
  • 473 ml ice cream of choice

  1. Step 1.Freeze scoops of ice cream on a tray until very hard.
  2. Step 2.Mix rice flour, sugar, water. Microwave in 1-min intervals stirring each time, 2-3 min total, until thick and sticky.
  3. Step 3.Knead on a cornstarch-dusted surface while warm.
  4. Step 4.Roll thin, cut circles. Wrap each around a frozen ice cream scoop. Seal.
  5. Step 5.Freeze 1 hour before serving.
