Ingredients

- 2 large eggplants
- 680.4 g ground lamb
- 1 onion
- 3 cloves garlic
- 396.9 g canned tomatoes
- 2.5 ml cinnamon
- 1.25 ml allspice
- 120 ml red wine
- 60 ml butter
- 60 ml flour
- 480 ml milk
- 2 yolks eggs
- 120 ml parmesan

Instructions
- Step 1.Slice eggplant, salt, let sit 20 min. Rinse. Brush with oil. Roast 20 min at 425F.
- Step 2.Cook lamb with onion until browned. Add garlic, wine, tomatoes, cinnamon, allspice. Simmer 20 min.
- Step 3.Make bechamel. Temper in egg yolks.
- Step 4.Layer: eggplant, meat, eggplant, meat, bechamel. Top with parmesan.
- Step 5.Bake 45 min at 350F. Rest 20 min before cutting.
