Ingredients

  • 2 large eggplants
  • 680.4 g ground lamb
  • 1 onion
  • 3 cloves garlic
  • 396.9 g canned tomatoes
  • 2.5 ml cinnamon
  • 1.25 ml allspice
  • 120 ml red wine
  • 60 ml butter
  • 60 ml flour
  • 480 ml milk
  • 2 yolks eggs
  • 120 ml parmesan

  1. Step 1.Slice eggplant, salt, let sit 20 min. Rinse. Brush with oil. Roast 20 min at 425F.
  2. Step 2.Cook lamb with onion until browned. Add garlic, wine, tomatoes, cinnamon, allspice. Simmer 20 min.
  3. Step 3.Make bechamel. Temper in egg yolks.
  4. Step 4.Layer: eggplant, meat, eggplant, meat, bechamel. Top with parmesan.
  5. Step 5.Bake 45 min at 350F. Rest 20 min before cutting.
