- 4 chicken thighs
- 120 ml red lentils
- 1 onion
- 2 carrot
- 1 apple
- 3 cloves garlic
- 15 ml ginger
- 30 ml curry powder
- 240 ml coconut milk
- 960 ml chicken broth
- 15 ml lemon juice

Instructions
- Step 1.Saute onion, carrot, apple in oil 8 min.
- Step 2.Add garlic, ginger, curry powder. Cook 2 min.
- Step 3.Add chicken, lentils, broth. Simmer 30 min until chicken is cooked.
- Step 4.Remove chicken, shred it. Blend soup until smooth.
- Step 5.Return chicken. Stir in coconut milk and lemon juice.
