  • 4 chicken thighs
  • 120 ml red lentils
  • 1 onion
  • 2 carrot
  • 1 apple
  • 3 cloves garlic
  • 15 ml ginger
  • 30 ml curry powder
  • 240 ml coconut milk
  • 960 ml chicken broth
  • 15 ml lemon juice

Instructions

  1. Step 1.Saute onion, carrot, apple in oil 8 min.
  2. Step 2.Add garlic, ginger, curry powder. Cook 2 min.
  3. Step 3.Add chicken, lentils, broth. Simmer 30 min until chicken is cooked.
  4. Step 4.Remove chicken, shred it. Blend soup until smooth.
  5. Step 5.Return chicken. Stir in coconut milk and lemon juice.
