  • 720 ml bread flour
  • 1.25 ml instant yeast
  • 7.5 ml salt
  • 360 ml water

  1. Step 1.Mix flour, yeast, and salt. Add water and stir until shaggy.
  2. Step 2.Cover and rest at room temperature 12-18 hours.
  3. Step 3.Turn out, fold 4 times. Rest 15 min. Shape into a ball.
  4. Step 4.Rest on floured parchment 2 hours.
  5. Step 5.Preheat Dutch oven at 500F 30 min. Bake covered 30 min, uncovered 15 min.
