- 907.2 g waxy potatoes
- 60 ml olive oil
- 10 ml smoked paprika
- 1.25 ml cayenne
- 120 ml tomato passata
- 2 cloves garlic
- 15 ml red wine vinegar
- to taste salt

Instructions
- Step 1.Parboil potato chunks 8 min. Drain and steam-dry.
- Step 2.Toss with olive oil, salt. Roast at 425F 30 min until crispy, flipping once.
- Step 3.Make brava sauce: fry garlic, add paprika, cayenne, passata, vinegar. Simmer 10 min.
- Step 4.Drizzle sauce over potatoes. Serve with aioli.
