  • 907.2 g waxy potatoes
  • 60 ml olive oil
  • 10 ml smoked paprika
  • 1.25 ml cayenne
  • 120 ml tomato passata
  • 2 cloves garlic
  • 15 ml red wine vinegar
  • to taste salt

Instructions

Plan my prep
  1. Step 1.Parboil potato chunks 8 min. Drain and steam-dry.
  2. Step 2.Toss with olive oil, salt. Roast at 425F 30 min until crispy, flipping once.
  3. Step 3.Make brava sauce: fry garlic, add paprika, cayenne, passata, vinegar. Simmer 10 min.
  4. Step 4.Drizzle sauce over potatoes. Serve with aioli.
