- 3 eggs
- 1 tbsp cold butter
- pinch salt
- optional - chives or tarragon fresh herbs

Instructions
- Step 1.Beat eggs until no streaks remain. Season.
- Step 2.Melt butter in a 10-inch non-stick pan over medium-high. Add eggs when butter foams.
- Step 3.Shake pan constantly while stirring with a fork. Keep eggs moving.
- Step 4.When eggs are almost set but still look creamy, tilt the pan and fold omelette toward you.
- Step 5.Roll onto a plate. It should be pale yellow, cigar-shaped, no colour.
