  • 1 tbsp cold butter
  • pinch salt
  • optional - chives or tarragon fresh herbs

  1. Step 1.Beat eggs until no streaks remain. Season.
  2. Step 2.Melt butter in a 10-inch non-stick pan over medium-high. Add eggs when butter foams.
  3. Step 3.Shake pan constantly while stirring with a fork. Keep eggs moving.
  4. Step 4.When eggs are almost set but still look creamy, tilt the pan and fold omelette toward you.
  5. Step 5.Roll onto a plate. It should be pale yellow, cigar-shaped, no colour.
