Ingredients

- 1 medium eggplant
- 2 zucchini
- 1 yellow squash
- 2 red bell pepper
- 4 tomatoes
- 1 onion
- 4 cloves garlic
- 3 sprigs thyme
- handful basil
- 60 ml olive oil
Make it your way
Instructions
- Step 1.Saute onion and peppers in oil 10 min. Add garlic.
- Step 2.Add tomatoes, thyme. Simmer 15 min.
- Step 3.Meanwhile, saute eggplant and zucchini separately until golden.
- Step 4.Combine all in the pot. Simmer together 20 min. Finish with basil.
