  • 1 medium eggplant
  • 2 zucchini
  • 1 yellow squash
  • 2 red bell pepper
  • 4 tomatoes
  • 1 onion
  • 4 cloves garlic
  • 3 sprigs thyme
  • handful basil
  • 60 ml olive oil

Instructions

Plan my prep
  1. Step 1.Saute onion and peppers in oil 10 min. Add garlic.
  2. Step 2.Add tomatoes, thyme. Simmer 15 min.
  3. Step 3.Meanwhile, saute eggplant and zucchini separately until golden.
  4. Step 4.Combine all in the pot. Simmer together 20 min. Finish with basil.
