Ingredients

  • 2 x 400 g tins black beans, drained, rinsed and patted dry
  • 80 g rolled oats
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp tomato puree
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil, for frying
  • 4 burger buns, to serve

Plan my prep
  1. Step 1.Blitz the oats in a food processor into a coarse flour, then tip into a large bowl.
  2. Step 2.Add about three-quarters of the black beans to the processor with the onion, garlic, smoked paprika, cumin, tomato puree, soy sauce, salt and pepper. Pulse to a coarse paste.
  3. Step 3.Add the paste to the oats along with the remaining whole black beans and mix well, mashing lightly so some texture remains.
  4. Step 4.Shape the mixture into 4 firm patties. Chill for 20 minutes to help them hold together.
  5. Step 5.Heat the olive oil in a frying pan over medium heat. Cook the patties for 4 to 5 minutes per side until browned and crisp, handling carefully when flipping.
  6. Step 6.Toast the burger buns if you like.
  7. Step 7.Serve the patties in buns with your favourite toppings such as lettuce, tomato, red onion and vegan mayo.
