- 450 g thick-cut bacon, about 12 slices
- 110 g packed brown sugar, light or dark
- 1 tsp cracked black pepper
- 1 tsp red pepper flakes
Make it your way
Instructions
- Step 1.Heat the oven to 350 F (175 C). Line a rimmed baking sheet with aluminum foil and set a wire baking rack on top.
- Step 2.Lightly coat the rack with nonstick cooking spray so the bacon releases cleanly.
- Step 3.In a small bowl, stir together the brown sugar, cracked black pepper and red pepper flakes until evenly blended.
- Step 4.Spread the sugar mixture on a dinner plate or cutting board.
- Step 5.Press each strip of bacon into the mixture, coating both sides and pressing firmly so it adheres.
- Step 6.Lay the coated strips in a single layer on the prepared rack, not touching.
- Step 7.Bake for about 30 to 35 minutes, until the bacon is deep golden brown and the coating has caramelized.
- Step 8.Let the bacon rest on the rack for a few minutes; it crisps as it cools. Serve warm.
