- 1.4 kg russet potatoes, peeled and quartered
- 115 g unsalted butter, at room temperature
- 180 ml half-and-half, warmed
- 120 g sour cream
- 2 cloves garlic, minced
- 1.5 tsp kosher salt, plus more for the water
- 1/2 tsp black pepper

Instructions
- Step 1.Put the peeled, quartered potatoes in a large pot and cover with cold water by about 2 inches. Salt the water generously.
- Step 2.Bring to a boil over high heat, then reduce to a steady simmer and cook 15 to 20 minutes, until the potatoes are fork-tender.
- Step 3.Drain the potatoes well and return them to the warm pot to let any excess moisture steam off for a minute.
- Step 4.Add the room-temperature butter and the minced garlic, mashing until the butter melts in.
- Step 5.Pour in the warmed half-and-half and add the sour cream.
- Step 6.Mash to your preferred texture, smooth or slightly chunky, being careful not to overwork them.
- Step 7.Season with the salt and black pepper, taste and adjust.
- Step 8.Serve hot, with an extra pat of butter on top if you like.
