Ingredients

  • 1.8 kg whole chicken, cut into 8 pieces, or bone-in thighs and drumsticks
  • 480 ml buttermilk
  • 60 ml hot sauce, such as Louisiana-style
  • 250 g all-purpose flour
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tbsp kosher salt, divided
  • 2 tsp black pepper
  • 1 tsp cayenne pepper
  • about 1 L vegetable oil, for frying

  1. Step 1.In a large bowl, whisk the buttermilk and hot sauce. Add the chicken pieces, turning to coat, then cover and refrigerate at least 2 hours or overnight.
  2. Step 2.In a separate bowl or shallow dish, combine the flour, garlic powder, onion powder, paprika, 2 teaspoons of the salt, the black pepper and cayenne.
  3. Step 3.Pour vegetable oil into a deep heavy pot or cast-iron skillet to a depth of about 2 inches (5 cm) and heat to 350 F (175 C).
  4. Step 4.Lift each piece of chicken from the buttermilk, letting excess drip off, then dredge thoroughly in the seasoned flour, pressing to coat.
  5. Step 5.Set the coated pieces on a rack and let them rest 5 to 10 minutes so the crust sets.
  6. Step 6.Working in batches to avoid crowding, lower the chicken into the hot oil and fry, turning occasionally, for about 12 to 15 minutes.
  7. Step 7.Cook until the crust is deep golden brown and the internal temperature reaches 165 F (74 C) at the thickest part.
  8. Step 8.Transfer to a wire rack or paper towels to drain, sprinkle with the remaining salt, and let rest a few minutes before serving.
