Ingredients

- 1.8 kg whole chicken, cut into 8 pieces, or bone-in thighs and drumsticks
- 480 ml buttermilk
- 60 ml hot sauce, such as Louisiana-style
- 250 g all-purpose flour
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp paprika
- 1 tbsp kosher salt, divided
- 2 tsp black pepper
- 1 tsp cayenne pepper
- about 1 L vegetable oil, for frying

Instructions
- Step 1.In a large bowl, whisk the buttermilk and hot sauce. Add the chicken pieces, turning to coat, then cover and refrigerate at least 2 hours or overnight.
- Step 2.In a separate bowl or shallow dish, combine the flour, garlic powder, onion powder, paprika, 2 teaspoons of the salt, the black pepper and cayenne.
- Step 3.Pour vegetable oil into a deep heavy pot or cast-iron skillet to a depth of about 2 inches (5 cm) and heat to 350 F (175 C).
- Step 4.Lift each piece of chicken from the buttermilk, letting excess drip off, then dredge thoroughly in the seasoned flour, pressing to coat.
- Step 5.Set the coated pieces on a rack and let them rest 5 to 10 minutes so the crust sets.
- Step 6.Working in batches to avoid crowding, lower the chicken into the hot oil and fry, turning occasionally, for about 12 to 15 minutes.
- Step 7.Cook until the crust is deep golden brown and the internal temperature reaches 165 F (74 C) at the thickest part.
- Step 8.Transfer to a wire rack or paper towels to drain, sprinkle with the remaining salt, and let rest a few minutes before serving.
