Ingredients

2 servings
  • 2 cups shredded green unripe papaya
  • 120 ml cherry tomatoes
  • 4 cut green beans
  • 2 cloves garlic
  • 2-3 bird's eye chili
  • 22.5 ml fish sauce
  • 30 ml lime juice
  • 15 ml palm sugar
  • 15 ml dried shrimp
  • 30 ml roasted peanuts

  1. Step 1.Pound garlic and chili in a mortar.
  2. Step 2.Add green beans and tomatoes, bruise lightly.
  3. Step 3.Add papaya, dried shrimp, fish sauce, lime, and sugar.
  4. Step 4.Pound and toss together. Taste - should be balanced sour, spicy, sweet, salty.
  5. Step 5.Top with roasted peanuts.
