  • 50 g whole wheat flour
  • 50 g all-purpose flour
  • 100 g water (unchlorinated, room temperature)

  1. Step 1.Day 1: Mix 50g flour and 50g water. Leave loosely covered 24 hours.
  2. Step 2.Days 2-7: Discard half. Add 50g flour and 50g water. Stir. Leave 24 hours.
  3. Step 3.By day 5-7 you should see consistent bubbling and doubling.
  4. Step 4.Starter is ready when it doubles in 4-8 hours after feeding and smells pleasantly sour.
