Ingredients

4 servings
  • 60 ml fine bulgur
  • 2 cups finely chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 diced tomatoes
  • 3 thinly sliced green onions
  • 45 ml lemon juice
  • 45 ml olive oil
  • 2.5 ml salt

  1. Step 1.Soak bulgur in boiling water 10 min. Drain and squeeze dry.
  2. Step 2.Finely chop parsley and mint (this takes time - do it right).
  3. Step 3.Combine with tomatoes, green onions, bulgur.
  4. Step 4.Dress with lemon juice, olive oil, and salt. Let sit 30 min.
