  • 1 lb peeled shrimp
  • 960 ml chicken broth
  • 2 stalks lemongrass
  • 4 slices galangal or ginger
  • 4 kaffir lime leaves
  • 30 ml fish sauce
  • 45 ml lime juice
  • 15 ml chili paste (nam prik pao)
  • 240 ml mushrooms
  • to serve cilantro

Instructions

  1. Step 1.Bruise lemongrass and tear lime leaves. Simmer with broth and galangal 10 min.
  2. Step 2.Add mushrooms and chili paste. Simmer 5 min.
  3. Step 3.Add shrimp. Cook 2 min until pink.
  4. Step 4.Remove from heat. Add fish sauce and lime juice. Top with cilantro.
