- 3 (about 300 g) very ripe bananas, mashed
- 60 ml vegetable oil, or melted coconut oil
- 100 g light brown sugar, packed
- 50 g granulated sugar
- 80 ml unsweetened plant milk
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 240 g all-purpose flour
- 60 g chopped walnuts, optional
Make it your way
Instructions
- Step 1.Preheat the oven to 175 C (350 F) and line a 9 x 5 inch loaf tin with parchment paper.
- Step 2.In a large bowl, mash the ripe bananas until mostly smooth.
- Step 3.Whisk in the oil, brown sugar, granulated sugar, plant milk and vanilla until well combined.
- Step 4.Add the baking soda, baking powder, salt and cinnamon and stir to distribute evenly.
- Step 5.Add the flour and gently stir until just combined, taking care not to overmix. Fold in the walnuts if using.
- Step 6.Pour the batter into the prepared loaf tin and smooth the top.
- Step 7.Bake for 55 to 65 minutes, until deep golden and a toothpick inserted in the centre comes out clean. Tent with foil after 40 minutes if browning too fast.
- Step 8.Let cool in the tin for 15 minutes, then transfer to a wire rack to cool completely before slicing.
