  • 3 (about 300 g) very ripe bananas, mashed
  • 60 ml vegetable oil, or melted coconut oil
  • 100 g light brown sugar, packed
  • 50 g granulated sugar
  • 80 ml unsweetened plant milk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 240 g all-purpose flour
  • 60 g chopped walnuts, optional

  1. Step 1.Preheat the oven to 175 C (350 F) and line a 9 x 5 inch loaf tin with parchment paper.
  2. Step 2.In a large bowl, mash the ripe bananas until mostly smooth.
  3. Step 3.Whisk in the oil, brown sugar, granulated sugar, plant milk and vanilla until well combined.
  4. Step 4.Add the baking soda, baking powder, salt and cinnamon and stir to distribute evenly.
  5. Step 5.Add the flour and gently stir until just combined, taking care not to overmix. Fold in the walnuts if using.
  6. Step 6.Pour the batter into the prepared loaf tin and smooth the top.
  7. Step 7.Bake for 55 to 65 minutes, until deep golden and a toothpick inserted in the centre comes out clean. Tent with foil after 40 minutes if browning too fast.
  8. Step 8.Let cool in the tin for 15 minutes, then transfer to a wire rack to cool completely before slicing.
