Vegan Overnight Oats
A make-ahead breakfast of rolled oats soaked overnight in plant milk with chia seeds and maple syrup, creating a creamy, ready-to-eat pot you can top however you like.

Ingredients

- 50 g rolled oats
- 150 ml unsweetened plant milk
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 1/4 tsp vanilla extract
- pinch pinch of salt
- 60 g fresh berries, to top
- 1 tbsp peanut butter, optional, to top
Make it your way
Instructions
- Step 1.In a jar or bowl, combine the rolled oats, plant milk, chia seeds, maple syrup, vanilla and salt.
- Step 2.Stir well to make sure the chia seeds and oats are fully moistened and there are no dry clumps.
- Step 3.Cover and refrigerate overnight, or for at least 6 hours.
- Step 4.In the morning, stir the oats. If they are too thick, loosen with a splash more plant milk.
- Step 5.Top with fresh berries and a drizzle of peanut butter.
- Step 6.Eat cold, straight from the fridge, or warm gently if preferred.
