- 240 ml egg whites, carton or fresh
- 30 g baby spinach, packed
- 40 g bell pepper, diced
- 50 g cherry tomatoes, halved
- 5 ml olive oil or cooking spray
- 1 g kosher salt
- 1 g black pepper
- 15 g feta cheese, optional, crumbled
Make it your way
Instructions
- Step 1.Heat the oil or spray in a nonstick skillet over medium heat.
- Step 2.Add the bell pepper and cook 2 minutes until it begins to soften.
- Step 3.Stir in the cherry tomatoes and spinach and cook 1 to 2 minutes, just until the spinach wilts.
- Step 4.Pour in the egg whites and season with the salt and pepper.
- Step 5.Let them set for about 30 seconds, then gently push the edges toward the centre with a spatula, tilting the pan so the raw whites flow underneath.
- Step 6.Continue folding softly for 2 to 3 minutes until the whites are set but still moist, not browned.
- Step 7.Scatter the feta over the top if using, fold once more, and slide onto a plate.
- Step 8.Serve immediately.
