  • 240 ml egg whites, carton or fresh
  • 30 g baby spinach, packed
  • 40 g bell pepper, diced
  • 50 g cherry tomatoes, halved
  • 5 ml olive oil or cooking spray
  • 1 g kosher salt
  • 1 g black pepper
  • 15 g feta cheese, optional, crumbled

  1. Step 1.Heat the oil or spray in a nonstick skillet over medium heat.
  2. Step 2.Add the bell pepper and cook 2 minutes until it begins to soften.
  3. Step 3.Stir in the cherry tomatoes and spinach and cook 1 to 2 minutes, just until the spinach wilts.
  4. Step 4.Pour in the egg whites and season with the salt and pepper.
  5. Step 5.Let them set for about 30 seconds, then gently push the edges toward the centre with a spatula, tilting the pan so the raw whites flow underneath.
  6. Step 6.Continue folding softly for 2 to 3 minutes until the whites are set but still moist, not browned.
  7. Step 7.Scatter the feta over the top if using, fold once more, and slide onto a plate.
  8. Step 8.Serve immediately.
